Thousand-Layer Potatoes

These crispy potato stacks have taken over TikTok and Instagram for good reason. Dozens of paper-thin potato slices, layered with garlic butter, pressed together and baked until the edges shatter and the centers stay creamy. Simple ingredients, stunning result.
Ingredients
- 3 lbs Yukon Gold potatoes
- 6 tbsp unsalted butter, melted
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp fresh thyme leaves
- Flaky sea salt
- Fresh cracked black pepper
- Fresh chives for garnish
- Parmesan cheese, finely grated (optional)
Step-by-Step Instructions
Step 1: Prep the Potatoes
Peel your potatoes and slice them as thin as humanly possible. A mandoline slicer is non-negotiable here. You want slices around 1/16 inch thick. Uniform thickness is what gives you those distinct, crispy layers.
Step 2: Make the Garlic Butter
Melt butter and combine with olive oil, garlic powder, smoked paprika, salt, and pepper. Toss every single potato slice in this mixture. Be thorough. Every layer needs fat to crisp properly.
Step 3: Stack and Press
Grease a loaf pan generously with butter. Start stacking potato slices vertically, pressing them tightly together every 10-15 layers. Pack them in as snug as possible. The tighter the layers, the better the final texture.
Step 4: Bake Low, Then High
Cover with foil and bake at 375F for 40 minutes. This steams the potatoes through. Remove the foil and bake another 20-25 minutes until the top is deeply golden and the edges are crispy. You want real color here, not pale gold.
Step 5: Rest and Unmold
Let the pan sit for 5 minutes. Run a knife around the edges and carefully flip onto a cutting board. The outside should be shattery and crisp, the inside soft and layered like a savory mille-feuille.
Serving Suggestions
- Next to a roasted chicken or grilled steak
- Alongside a simple green salad with lemon vinaigrette
- As a show-stopping side for dinner parties
- Dipped in garlic aioli or sour cream
Tips
- Do not skip the mandoline. Hand-slicing will not get you thin enough, and uneven slices won’t crisp the same way.
- Yukon Golds are the best potato for this. They have the right balance of waxy and starchy for creamy interiors and crispy edges.
- For mini versions, use a muffin tin. Stack slices into each cup for individual potato stacks that make perfect portions.
- Add finely grated Parmesan between every few layers for an extra savory punch.
- These reheat well in a 400F oven for 10 minutes. Skip the microwave.
