Pistachio Kunafa

If you have been anywhere near food TikTok lately, you have seen pistachio kunafa. The combination of shattering crispy phyllo and creamy pistachio filling is genuinely hard to stop eating. This version uses ricotta to keep the filling smooth without hunting down traditional ashta cream.
Ingredients
- 1 lb shredded kataifi dough, thawed
- 1/2 cup unsalted butter, melted
- 2 cups shelled pistachios
- 1 cup ricotta cheese
- 1/4 cup powdered sugar
- 1 tbsp rose water
- 1 cup granulated sugar
- 3/4 cup water
- 1 tbsp lemon juice
- 1 tsp orange blossom water
- Crushed pistachios for garnish
Step-by-Step Instructions
Step 1: Make the Syrup First
Combine sugar, water, and lemon juice in a small saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes until slightly thickened. Stir in the orange blossom water. The syrup needs to be completely cool when you pour it, so make this first.
Step 2: Prepare the Pistachio Filling
Pulse the pistachios in a food processor until finely ground but not a paste. Mix with ricotta, powdered sugar, and rose water. You want it spreadable but with some texture from the nuts.
Step 3: Butter the Dough
Pull apart the kataifi dough and loosen all the shredded strands. Pour the melted butter over it and toss with your hands until every strand is coated. This is what makes it crispy, so do not skip.
Step 4: Assemble
Press half the buttered dough into a well-greased 9-inch round pan, pushing it firmly against the bottom and sides. Spread the pistachio filling in an even layer. Cover with the remaining dough and press down firmly with your palms.
Step 5: Bake
Bake at 375°F for 25 to 30 minutes. You want it deep golden brown, not just lightly toasted. The darker it gets (without burning), the crispier and better it will be.
Step 6: Syrup and Serve
This part matters: flip the kunafa onto a serving plate immediately out of the oven. Pour the cold syrup evenly over the hot kunafa. The temperature contrast is what gives it that satisfying crunch. Garnish with crushed pistachios.
Serving Suggestions
- Serve warm, within an hour of baking for the best texture
- A scoop of vanilla ice cream on the side is not traditional but absolutely works
- Pair with strong Arabic coffee or mint tea
Tips
- The syrup must be cold and the kunafa must be hot. If both are the same temperature, you get soggy instead of crispy.
- If you cannot find kataifi dough at your grocery store, check Middle Eastern or Mediterranean markets. It is almost always in the freezer section.
- You can assemble the whole thing a few hours ahead and refrigerate. Add 5 extra minutes to the bake time if going straight from the fridge.
- A 9-inch springform pan makes flipping much easier. Release the sides and slide it right onto the plate.
