Korean Corn Dogs

These crispy, cheesy Korean corn dogs have taken over street food stalls and TikTok feeds for good reason. A yeasted batter gives them that signature chewy crunch, and a panko coating adds extra texture you won’t get from a regular corn dog.
Ingredients
- 6 hot dogs or mozzarella cheese sticks (or half and half)
- 1 cup all-purpose flour
- 1/4 cup rice flour
- 2 tbsp sugar
- 1 tsp instant yeast
- 1/2 tsp salt
- 3/4 cup warm water
- 1 cup panko breadcrumbs
- Vegetable oil for frying
- Ketchup and mustard for serving
Step-by-Step Instructions
Step 1: Make the Batter
Whisk together the all-purpose flour, rice flour, sugar, yeast, and salt in a tall, narrow bowl or large cup. Pour in the warm water and stir until you get a thick, sticky batter. It should be thicker than pancake batter. Cover with plastic wrap and let it rise for about 30 minutes at room temperature.
Step 2: Prep the Skewers
Pat your hot dogs and cheese sticks completely dry with paper towels. This is important. Moisture is the enemy of batter adhesion. Push a wooden skewer or chopstick into each one, leaving enough handle to hold.
Step 3: Coat and Bread
Dip each skewer into the batter, turning and using a spoon to coat it evenly. The batter should cling in a thick layer. Immediately roll in panko breadcrumbs, pressing gently so they stick.
Step 4: Fry
Heat about 3 inches of vegetable oil in a heavy pot to 350F. Use a kitchen thermometer to keep it steady. Fry 2-3 corn dogs at a time for 3 to 4 minutes, turning occasionally, until deep golden brown all over. If using cheese, keep the oil at 350F so the batter cooks before the cheese melts out.
Step 5: Drain and Serve
Transfer to a wire rack. Hit them with a squirt of ketchup and mustard while they’re still hot. Eat immediately.
Serving Suggestions
- Roll in a sugar coating right after frying for the classic Korean street food experience
- Drizzle with honey mustard or spicy mayo
- Serve alongside pickled radish for a tangy contrast
Tips
- The rice flour makes the batter extra crispy. Don’t skip it.
- If you want the half-cheese, half-hot-dog combo, cut both in half and stack them on the skewer.
- Freeze assembled (but unfried) corn dogs on a sheet pan, then store in a bag. Fry from frozen, adding an extra minute of cook time.
- Keep the oil temperature consistent. Too hot and the outside burns before the inside cooks. Too cool and the batter absorbs oil and gets greasy.
