Cottage Cheese Flatbread

This flatbread broke TikTok for good reason. Two main ingredients, no flour, and it comes out of the oven golden and crispy with a soft, almost chewy center. It packs around 15g of protein per serving, which makes it a genuinely useful snack.
Ingredients
- 1 cup cottage cheese (use full-fat for best results)
- 2 large eggs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons shredded parmesan
- Fresh rosemary or everything bagel seasoning for topping
- Olive oil for brushing
Step-by-Step Instructions
Step 1: Prep the Oven and Pan
Preheat your oven to 425°F. Line a baking sheet with parchment paper. Don’t skip the parchment, the batter will stick to bare metal.
Step 2: Blend the Batter
Toss the cottage cheese and eggs into a blender or food processor. Blend until completely smooth, about 30 seconds. You don’t want any lumps. The texture should look like a thin pancake batter.
Step 3: Season It
Pour the batter into a bowl and stir in garlic powder, salt, pepper, and parmesan. Mix until everything is combined.
Step 4: Spread and Top
Pour the batter onto the prepared baking sheet. Use the back of a spoon or an offset spatula to spread it into a thin rectangle, roughly 1/4 inch thick. Thinner edges will get extra crispy. Brush the top lightly with olive oil, then sprinkle your topping of choice over the surface.
Step 5: Bake
Slide the pan into the oven and bake for 12 to 15 minutes. You’re looking for golden edges and a set center. If you want it extra crispy, hit it with the broiler for the last minute or two. Watch it closely.
Step 6: Slice and Serve
Let it cool on the pan for a couple minutes. It firms up as it cools. Cut into squares or strips and eat warm.
Serving Suggestions
- Dip strips into marinara or hot honey for a sweet heat combo
- Top with everything bagel seasoning, sliced tomatoes, and a smear of cream cheese
- Serve alongside soup or a big salad as a bread replacement
- Stack toppings on it like a mini pizza base
Tips
- Full-fat cottage cheese gives the best texture and flavor. Low-fat works but the flatbread will be drier.
- Blend until truly smooth. Any cottage cheese curds left will make the texture lumpy.
- Spread the batter thin. Thick flatbread stays soft in the middle and never crisps up.
- Let it cool before cutting. It goes from floppy to firm in about two minutes off the heat.
