Crunch Dream Cake

The Crunch Dream Cake is a no-bake dessert that delivers on every level: a buttery cookie crust, a cloud-like cream cheese filling studded with crunchy chocolate pieces, and a glossy ganache topping. It’s the kind of dessert that makes people ask for the recipe.

Ingredients

Crust

  • 2 cups chocolate cookie crumbs
  • 6 tablespoons butter, melted

Filling

  • 2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 6 Crunch bars, chopped (or 2 cups chocolate-covered crispy rice candy)

Topping

  • 1/2 cup chocolate ganache
  • Extra crushed Crunch bar

Step-by-Step Instructions

Step 1: Make the Crust

Combine cookie crumbs and melted butter. Press firmly into the bottom of a 9-inch springform pan. Refrigerate while you make the filling.

Step 2: Whip the Cream

Beat heavy cream with a hand mixer or stand mixer until stiff peaks form. Set aside.

Step 3: Make the Filling

Beat softened cream cheese, powdered sugar, and vanilla until completely smooth (no lumps!). Gently fold in the whipped cream, then fold in the chopped Crunch bars.

Step 4: Assemble

Pour the filling over the crust and smooth the top with an offset spatula.

Step 5: Add Ganache

Heat 1/4 cup cream until simmering, pour over 4 oz chopped chocolate, and stir until glossy. Let cool slightly, then pour over the cake. Sprinkle with crushed Crunch bars.

Step 6: Chill

Refrigerate for at least 4 hours, ideally overnight. The filling needs time to set properly.

Tips for the Perfect Crunch Dream Cake

  • Soften cream cheese fully because cold cream cheese = lumpy filling
  • Don’t over-fold the whipped cream. You want to keep that airy texture
  • Freeze Crunch bars first before chopping. They’ll chop cleaner and stay crunchier in the filling
  • A springform pan is key since you need to be able to unmold this cleanly
  • Let ganache cool before pouring. Too hot and it’ll melt the filling
  • Customize: Swap Crunch bars for Butterfinger, Kit Kat, or Heath bars
  • Keeps 5 days in the fridge, covered
