Smash Burger Tacos

The concept is almost too simple to work this well. You smash a ball of seasoned beef directly onto a tortilla on a screaming hot griddle, let it get impossibly crispy, fold it over with cheese, and that’s it. It’s a taco and a smash burger at the same time, and it’s better than either one alone.

Ingredients

  • 1 lb ground beef (80/20 blend)
  • 8 small flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 white onion, finely diced
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Shredded lettuce
  • Diced tomatoes
  • Pickled jalapenos
  • Your favorite taco sauce

Step-by-Step Instructions

Step 1: Prep the Beef

Divide your ground beef into 8 equal balls, roughly 2 oz each. Don’t overwork the meat. Just roll them loosely and set them aside.

Step 2: Get the Griddle Screaming Hot

Heat a flat cast iron griddle or large cast iron skillet over high heat. You want it smoking. This is non-negotiable. The sear is everything.

Step 3: Smash It

Lay a tortilla flat on the griddle. Place one beef ball on one half of the tortilla. Press it flat with a sturdy spatula or burger press. Really lean into it. You want it thin and wide.

Step 4: Season and Crisp

Hit the smashed beef with garlic powder, smoked paprika, salt, and pepper. Let it cook untouched for 2 to 3 minutes. You’re looking for a deep, dark crust on the bottom.

Step 5: Cheese and Fold

Pile shredded cheese and diced onion onto the beef. Fold the empty tortilla half over the loaded side. Press down gently with the spatula and flip the whole thing. Cook another minute or two until the tortilla is golden and crispy.

Step 6: Top and Serve

Pull it off the heat. Open it up slightly and load it with shredded lettuce, diced tomatoes, pickled jalapenos, and a drizzle of your go-to taco sauce.

Serving Suggestions

  • Serve with a side of Mexican street corn or elote cups
  • Pair with a cold beer or a lime agua fresca
  • Double up on the beef balls if you want a thicker, more burger-like bite

Tips

  • 80/20 beef is key. Leaner meat won’t get that crispy crust and the tortilla will dry out.
  • Don’t move the beef once you smash it. Let the Maillard reaction do its thing.
  • If your tortillas are stiff, warm them for a few seconds on the griddle first so they fold without cracking.
  • Work in batches. Crowding the griddle drops the temperature and kills the sear.
