Green Goddess Salad
This salad took over TikTok for a reason. The dressing is thick, packed with herbs, and makes raw cabbage taste like something you’d pay $18 for at a restaurant. It comes together in 15 minutes with no cooking.
Ingredients
For the Salad
- 1 head green cabbage, finely chopped
- 2 Persian cucumbers, diced
- 2 green onions, sliced
For the Green Goddess Dressing
- 1 cup fresh basil leaves
- 1 cup fresh spinach
- 1/4 cup fresh chives
- 2 cloves garlic
- 1/3 cup olive oil
- 3 tbsp lemon juice
- 2 tbsp rice vinegar
- 1/4 cup nutritional yeast
- 1/3 cup walnuts
- Salt and pepper to taste
Step-by-Step Instructions
Step 1: Prep the Vegetables
Finely chop the cabbage. You want it thin, almost shredded. Dice the cucumbers into small pieces and thinly slice the green onions. Toss everything together in a large bowl.
Step 2: Make the Dressing
Add basil, spinach, chives, garlic, olive oil, lemon juice, rice vinegar, nutritional yeast, walnuts, salt, and pepper to a food processor. Blend until smooth and creamy. Taste and adjust salt or lemon juice as needed.
Step 3: Toss and Serve
Pour the dressing over the vegetables and toss until everything is evenly coated. The dressing is thick, so really get in there with tongs or your hands. Top with extra walnuts, sesame seeds, or flaky sea salt.
Serving Suggestions
- Serve as a side with grilled chicken or salmon
- Pile it on toast for an open-faced sandwich
- Add chickpeas or white beans to make it a full meal
- Works great in a wrap or pita
Tips
- The dressing thickens as it sits. If making ahead, thin it with a splash of water before tossing.
- Cabbage holds up well, so this salad keeps in the fridge for a day without getting soggy.
- No food processor? A blender works, but you may need to scrape down the sides a few times.
- Swap walnuts for cashews or pine nuts if you prefer a milder flavor.
