Greek Yogurt Bark

This is the snack that took over TikTok and never left. Frozen Greek yogurt bark is crunchy, creamy, sweet, and takes about five minutes to throw together. It scratches the ice cream itch without the guilt.

Ingredients

  • 2 cups Greek yogurt (full fat works best)
  • 3 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/2 cup mixed berries (blueberries, raspberries, sliced strawberries)
  • 2 tablespoons dark chocolate chips
  • 2 tablespoons unsweetened shredded coconut
  • 2 tablespoons chopped pistachios
  • 1 tablespoon freeze-dried raspberries (optional)

Step-by-Step Instructions

Step 1: Mix the Base

Stir together the Greek yogurt, honey, and vanilla extract in a bowl. Taste it. Adjust the honey if you want it sweeter. The yogurt should be smooth with no honey streaks.

Step 2: Spread It Out

Line a baking sheet with parchment paper. Pour the yogurt mixture onto the sheet and spread it into an even layer, roughly 1/4 inch thick. A little thicker is fine, but don’t go too thin or it’ll shatter into dust.

Step 3: Add the Toppings

Scatter the berries, chocolate chips, coconut, pistachios, and freeze-dried raspberries over the yogurt. Press everything down gently so the toppings stick.

Step 4: Freeze

Slide the sheet into the freezer for at least 2 hours. You want it frozen solid, not slushy.

Step 5: Break and Store

Pull the sheet out and break the bark into rough pieces. Work fast because it melts quickly at room temperature. Store pieces in a freezer-safe bag.

Serving Suggestions

  • Eat straight from the freezer as an afternoon snack
  • Crumble over a smoothie bowl for extra crunch
  • Pack in a lunchbox with an ice pack for the kids

Tips

  • Full-fat yogurt freezes with a creamier texture. Low-fat versions get icy.
  • Swap toppings based on what you have. Granola, peanut butter drizzle, mini M&Ms, whatever works.
  • The bark softens fast. Pull out only what you plan to eat right away.
  • For cleaner pieces, score the yogurt with a knife before it fully freezes (about 45 minutes in).
